Peaches and Watermelons are some of Executive Chef Demetrio Zavala’s favorite summer ingredients – see how we’ve incorporated them into our special dishes!
Perhaps one of the most creative preparation of peaches can be found in our Roasted Peaches dish, made with blue cheese funnel cake (yes, funnel cake), aged balsamic, and corn powder.
Our famous Brussels Sprouts will now be made with pistachio honey vinaigrette, roasted peaches and basil crema. A peachy entree is our Lavender Spiced Duck, made with pickled peaches, coffee corn puree, barley, and mole jus. And for Dessert enjoy our Peach “Mel”ba made with Spiced Pound Cake, Peach Compote, Pistachio Meringue, and Raspberry Sorbet!
Among our watermelon-themed dishes we have Charred Octopus with sofrito lentils, salsa verde compressed watermelon, and jalapeno vinaigrette, our Watermelon & Cucumber with bacon oil, balsamic onions, tomato water, and blue cheese vinaigrette.
Entrees include our NY Strip with feta cheese funnel cake, watermelon romesco and pickled shallots. Finish it off with our Watermelon Consomme Dessert!
